Chicken Tortilla Soup

This has become a family favorite. The best part if you like it spicy or hot you can make it easily, by substituting mild ingredients for their hot versions.

Ingredients-

  • 4 uncooked boneless skinless chicken breasts
  • 1 (15oz) can of un-drained crushed or petite tomatoes
  • 1 (10oz) can of mild or medium red enchilada sauce
  • 1 (15oz) can of black beans, Drained and rinsed
  • 1 medium onion, chopped. I omit this because my son hates them and its just as good.
  • 1 (4oz) can of chopped green chile peppers
  • 2 minced cloves of garlic
  • 1 (15oz) can of corn, drained
  • 2 (14.5oz) can of chicken broth
  • 1 Tsp Cumin
  • 1 Tsp Chili Powder
  • 1 Tsp salt
  • 1/2 Tsp Pepper
  • 1 bay leaf

 

  • Instructions: Place all ingrediants in Crockpot. Cook on High for about 3 to 4 hours. When chicken is done. Pull out the chicken and shred with a fork. Caution they are hot! Add the chicken back in and let sit for about 5 minutes then serve. Top with cheese and tortilla strips or broken chips.

As everyone knows I am on a diet. I have not used much protein powder so far. But now that its getting too hot to eat heavy meals, I have to find a lighter meal or snack. I recently purchased a new Nutri-Ninja blender so making smoothies are a must. But why should I make something unhealthy? A couple of ice cubes and a few strawberries to my protein shake is an easy breakfast. Slimquick Pure Protein can be consumed just with water. I did try it the way it that way. It was good. When compared to other brands I have tried its equal as far as taste. I prefer making my Protein with Low fat milk or Almond milk. When I made Slimquick with milk I loved the taste and in my smoothie even better. YUM!

New SLIMQUICK  Pure Protein tastes great and provides 20 grams of protein and 6 grams of fiber a day. Just what my diet needs to feel full longer and keep me out of the cookie jar. Since I have used this product less then a week I can not say how well it works with weight loss. Banana Breakfast Smoothie

  • 3/4 Cup of Strong Black Coffee
  • 1 Cup of Non Fat Milk
  • 2 Bananas
  • 1 Cup of Ice

Blend in a Blender. You can Sprinkle Cinnamon on top.

Avocado Chicken Salad: A healthier chicken salad.

As you all know I am dieting. So I need to find healthy ways to eat old favorites. I resurrected an oldie but a goodie. This is almost like a guacamole with chicken. It is a healthier alternative to Chicken salad. It has less mayo and avocado for a healthy fat.

Ingredients:
2 cups shredded chicken
1 avocado
1/2 tsp garlic powder
1/2 tsp salt
1/2 tsp pepper
2 tsp lime juice
1 tsp fresh cilantro
1/4 cup mayo
1/4 cup plain Greek Yogurt

Directions:
Mix all ingredients in a large bowl. Cover and refrigerate for at least 20-30 minutes to let all those yummy flavors blend together.

Serve on bread, flat bread, pita chips or any other way you like your chicken salad.
